These Brisling sardines are caught in the Baltic Sea and carefully prepared by hand with fresh, whole fish. After being cleaned and de-headed by hand, they are then cleaned and lightly smoked with beechwood using an old-fashioned smoking process that brings out all the flavors of their soft flesh. Once they have been prepared, the sardines are placed in tins by hand and preserved in oil.
